Shrimp Spaghetti. Mac and Cheese. Soup. Tacos. {What We Ate}

HAPPY MONDAY! So last week came and went in a blink of an eye. It was a different week for us because Aaron was off all week. Sometimes when he's home for a couple days in a row we tend to run around and eat out a lot but I wanted this week to be different. I wanted to spend as much time as possible at home so Aaron could really enjoy the kids. Tuesday morning, I made our menu and sent Aaron to the grocery store (score!). I made sure to plan easy meals so I wouldn't be in the kitchen a ton and if we were out and about I could still come home and whip something up in 30 minutes or so.



Lemon Shrimp and Spinach Spaghetti

Elle loves shrimp, so this is one of her favorite meals. This is one of, if not, the easiest meals I make in our rotation. Takes about 30 minutes start to finish.  Super healthy. Super delicious. And super easy to prepare.



Chicken and Broccoli Mac and Cheese

I had this on my menu to make the week before and never got around to it so we had this last Sunday night. While it wasn't my favorite homemade mac and cheese, it satisfied. But I most likely won't make it again. Elle loved it. Harry was indifferent.



Slow Cooker Loaded Potato Soup and Cobb Salad

Y'all. This potato soup is SO good. Make it. I'm going to be adding it to our winter rotation. Mmmmm. Its so good and hearty and feeling and makes me feel all warm and fuzzy inside. The perfect comfort food. Aaron said that next time I make this I don't even need to put together a salad. The kiddos loved the soup too! Ate it up.


But doesn't this salad look so pretty! Spring mix, bell pepper, cherry tomatoes, cucumbers, hard-boiled egg, ham, turkey, bacon, and cheddar. I would eat a big helping right now. I love a good cobb salad. This is definitely a meal in itself.

We had Taco Tuesday this week but I thought instead of showing you a boring picture of tacos on a plate I would share my guacamole recipe with you. Lucky you :)

makes 4 generous servings


1/4 cup yellow onion, chopped
1/4 cup tomato, chopped
1/4 cup cilantro, chopped
1 small jalapeno, chopped (forgot to add that in the ingredients picture)
1 small lime, juiced
2 ripe avocados, mashed
1 tsp cumin
1/2 tsp white pepper
1 tsp garlic

Combine all and enjoy!!

I get a lot of compliments on my guacamole any time I take it anywhere so I thought I would measure out all the ingredients as I threw everything in a bowl this time so that next gathering I would have a recipe to share with my friends. If grown ups are only eating the guacamole I'll add chili powder and cayenne pepper to it a little extra kick. To me, guacamole is one of those things you make to your liking so you can add or take away anything from this to make it to your taste!
