Enchiladas. Sliders and Soup. Shrimp. {What We Ate}

Hi friends! Happy Monday! I can't believe that my last What We Ate post was December 1st. Last month was so busy and flew by. I finally feel like I'm back in my meal-planning groove.


Spaghetti with Tomatoes and Shrimp

Kale Caesar Salad

Yay for shrimp! Elle LOVES shrimp and she devoured this spaghetti!


Ham and Swiss Sliders

package deli ham
package deli swiss
yellow mustard
dill pickle relish
Hawaiian rolls
melted butter
black pepper

Remove rolls from package without separating them. Cut rolls in half, creating one large top half and bottom half. Layer the ham on the bottom half and the cheese on top of it. Spread the mustard and pickles on the top half and lay on the bottom half. Melt butter in microwave and add garlic and pepper to taste and brush all over the top of the rolls. Bake in 400° oven for about 15 minutes or until tops are lightly browned (mine got a little burnt on the corners so watch carefully.

These are so good with the mustard and pickle relish. YUM!

No-Fuss Potato Soup
[recipe from Fix It and Forget It Cookbook]

6 cups diced, peeled potatoes
5 cups water
2 cups diced onions
1/2 celery
1/2 cup chopped carrots
1/4 cup butter
4 tsp chicken bouillon granules
2 tsp salt
1/4 tsp salt
12-oz can evaporated milk
3 tbsp fresh parsley
8 colby jack cheese, shredded

Combine all ingredients except evaporated milk, parsley and cheese in the slow-cooker. Cover and cook on high 7-8 hours or until veggies are tenders. Before serving add milk and parsley stir in cheese until its melted.

This recipe is also a very good potato soup recipe but I like to sneak in veggies whenever I can I decided to make the recipe with the added veggies. The recipe calls for only 1/2 cup of celery and carrots but I added quite a bit more to my soup. Probably about a cup and a half of each. As well as the bouillon granules. I added a tablespoon.

I went to grab my camera to take pictures of our dinner and this is how I found Harry! HE is such a little stinker. I see many broken bones in his future.

My picture doesn't look like much (A Couple Cooks picture is MUCH prettier...I should've added some cilantro garnish to mine) but these seriously are the BEST veggie enchiladas EVER. Give them a try sometime. Both my kids really like them! The best part is they are even better leftover. We ate them two nights in a row!
