Firecracker Shrimp Tacos + French Dip Sandwiches {What We Ate}

Good morning friends! How is it already Monday? Last weekend flew by! We had a pretty lazy weekend and I got absolutely nothing on my to-do list checked off. I guess it really wasn't that important anyway.

I tried a couple new recipes last week, one we loved one we could live with out. I also made the No-Fuss Potato Soup (posted recipe [here] a couple of weeks ago) and took it over to our friends' house for dinner one night.

These were DELICIOUS and we will definitely have them again and again and again. And what is most appealing about these is the quickness of preparing them. With Harry being 21 months old, its a little hard for me to prepare dinner when he's awake because I literally cannot take my eyes off of him for 2 seconds. He makes the biggest messes in the shortest amount of time and he's a climber. So if he's not making a mess he's trying to break a bone. Lately I've been prepping meals during Harry's naps if I can and then cooking them once Aaron gets home from work. I love that this meal can be prepped and cooked in about 15-20 minutes time so I can just do it all when Aaron gets home from work.

I love SkinnyTaste and have, until now, LOVED everything I have ever made from her blog. These sandwiches weren't gross or anything. The caramelized onions definitely saved them for me but, the meat was a little dry, which in all actuality had nothing to do with her recipe as it did with my crockpot. So yea, the sandwiches weren't horrible and I might actually make them again just not cook them as long. Her recipe suggests 9-12 hours on low and I had the roast in my crockpot for about 7 hours, so maybe next time only about 6 hours.

Let's talk about the Kale salad. I got it at Sam's Club for $2.98. It is called Sweet Kale Vegetable Salad by Eat Smart. Go to their website [here] and you can find where it's sold in your area. It has 7 super foods: kale, broccoli, chicory, cabbage, brussel sprouts, dried cranberries, and roasted pumpkin seeds. Also includes a delicious poppyseed dressing. No artificial flavors and no high-fructose corn syrup and so yummy. Neither one of my kids liked it of course but Aaron and I both loved it and for THREE DOLLARS you can't make a salad with that many different greens in it for that price!

Our Disney trip is coming up (yayayayay!!!!!!), so that's what I'm dedicating this week to: cleaning house and packing. Every time we take a trip, I go into this weird obsessive-cleaning mood before we leave. I love coming home from vacation to a super clean house! So since I will be obsessing over cleaning I won't be cooking much this week. Instead we will eat a couple of the meals I've frozen and have sandwiches. I'm going to go easy on myself this week so I can focus on getting organized for our trip.
