Monday Musings About Food and Stuff....

No What We Ate post today. Sorry. We needed to have a week where we ate what we had so we could clean out the fridge and pantry. I had to go to the store to get the basics like milk and some produce and a few snacks for the kiddos. One night I thawed out chicken noodle soup for dinner, we had breakfast for dinner one night, a couple nights we had Subway (gift cards from Christmas...yay!), Friday night we had cereal (I was really tempted to order in pizza because Aaron was at a work function, but resisted and cereal it was and it was just fine. I think Harry some lunch meat and veggie chips. Super heatlthy). It was definitely an uneventful week as far as dinners were concerned.


Breakfast for dinner turned out really good. I literally took everything in the fridge that was getting ready to go bad and made it into the omelet. Sauteed kale and spinach, carmelized onions, bacon, and cheddar. I had a couple of potatoes left over from the potato soup I made a couple of weeks ago so I fried them up in a little bit of butter and added some dried parsley flakes. Elle was not a fan of the omelet but loved the potatoes and picked the bacon out of the omelet and ate a little bit of the egg. I really can't pin point when she got so dang picky about vegetables but it makes me crazy! Most of the time if I can get her to at least try it, she'll like it but she was not feeling the kale and spinach this night at all.


I forgot I did make this Jambalaya Risotto last week too...So so good! But mine wasn't this pretty, so I didn't take a picture and am using this picture from the source of the recipe. I've never made risotto before and apparently the key to getting it the pretty white color is to stir continually to release the start in the risotto. I stirred a lot. I got tired from stirring but my risotto was more of a brown color from the beef broth. It was a yummy on-dish meal and I'll definitely be trying my hand at risotto again. Both of the kids LOVED this!


Here are some recipes that I've pinned to my cookbook board that  I want to try: hoison pork, stuffed portobello mushrooms and firecracker shrimp. All of these sound equally delicious to me! Can't wait to give them a go.


Have you seen the healthy 2-ingredient cookie floating around Pinterest? It is legit. It's definitely NOT the normal cookie that you are used to. I mean it's made from bananas and oats but they are really good for being as healthy as they are! It's 2 ripe bananas mashed with 1 cup quick-cooking oats and whatever add-ins you like. I've made batches with chocolate chips and unsweetened coconut and batches with cinnamon and raisins. Bake at 350° for 12-15 minutes. Original recipe [here]. Elle asked for them for breakfast on Friday morning and ate 6 of them.


And for a dessert that's at the opposite end of the health spectrum I give you the S'mores Dip. SO EASY! I shared this recipe on Instagram so if you saw it there already sorry for the redundancy. All you do is melt chocolate chips in a 300° oven for around 5 minutes, add a handful of marshmallows on top of the melted chocolate and switch oven to broil and broil until desired toastyness is achieved. Someone commented on my Instagram post that they make this and put it in ramekins. Such a fun idea for a dinner party!

And some recent (very unhealthy) sweet treats I've pinned that I'm dying to try: boston cream pie bites, copycat tagalongs, cookie dough footballs, and cake batter chocolate chip cookies. The problem with desserts in my house is that I'm the only one that eats them. My husband doesn't have a sweet tooth and obviously I don't want my kids eating a ton of sugar. So yea, I eat it. So rather than making it just for the heck of it I usually save up a recipe until I know I'll be able to share it with friends or family. I think I might give those cute football bites a go for the Super Bowl. As I'm typing away I just remembered that I have a box cake mix in my pantry, I might just have to make those cookies for sew group tomorrow night.
