Shrimp Spaghetti. Beef Stew. Nachos. {What We Ate}


Elle Louise LOVES shrimp so every week I try to make one meal with shrimp. I made this spaghetti a few weeks ago and everyone loved it so here you see it again.

I didn't love this. Aaron and the kids actually really liked it so that's all that really matters anyway. When I was making our meal plan for this week I came across Pioneer Woman's Beef Stew that I will try the next time. I love how stew is loaded with veggies, it's a good all-in-one meal. I do like that, just need to find a recipe that I find appetizing :)



Tortilla Chips
8 ounce block Colby and Monterey Jack Cheese, shredded
Ground Beef
Fiesta Taco Seasoning
1 can Black Beans
Romaine, chopped
Pioneer Woman Salsa [here]
My Guacamole [here]
Sour Cream

Preaheat oven to 350°.  Heat the black beans on the stove top or in the microwave, however you prefer, set aside. Brown beef with taco seasoning according to packaging. While meat is browning, cover a baking sheet with the tortilla chips in a single layer. Completely cover the chips with the shredded cheese and put in the oven and bake until cheese is melted, about 5 minutes. Transfer the chips onto plates and layer with ground beef, black beans, lettuce, salsa, guacamole and sour cream.

We like to have Mexican food one night a week. We usually have enchiladas or tacos but these nachos were a fun way to mix up the menu and both of my kids LOVED them!! And it was easy for me to prepare after a busy day away from the house.
