Mango + Jalapeno Quinoa Salad {copycat Jason's Deli recipe}

Happy Wednesday, friends. It's another rainy day for us. We've been having so much rain. Crazy flash floods and all. It's a mess. One more day of projected rain tomorrow and then the summer weather will be back to dry us all up. Just in time for the weekend.

Last week we ate at Jason's Deli and I had the quinoa salad off the salad bar and it was so good, so I sat there and dissected it, made notes and recreated it for dinner a few days later. It turned out so good. My family loved it. I made it again today and remembered that I wanted to share the recipe with you.

This recipe makes a TON. Probably around 12 servings. We ate on it for 3-4 days.

Mango + Jalapeno Quinoa Salad
{copycat Jason's Deli recipe}

4 cups vegetable broth (or water)
2 cups white quinoa
1 cup red onion, chopped
1 avocado, chopped
1/2 pink grape tomatoes, halved
1/2 cup cilantro, chopped (more or less to your liking)
2 jalapenos, chopped
1 cup mango, chopped
4 tbsp olive oil
juice of 1 lime
salt + pepper to taste

Bring vegetable broth and quinoa to a boil. Reduce heat to simmer, cover and cook for 15-20 minutes or until all liquid is cooked out. Remove quinoa from heat and let cool completely. Once cooled add all fruit and veggies, olive oil, lime juice and salt pepper and mix until combined.

Simple as that! Delicious and HEALTHY. A perfect summer side.




  1. Maybe the salad is made different for different areas as I sure taste a vinegar and sweetness in the dressing at my local Jason's. Love it! Thanks for sharing.

  2. It's Mango Pickapeppa Sauce in place of the lime juice.
