Sausage and Vegetable Skillet {a quick and easy dinner}

Hi there!

Its our second day of being confined to the house. Harry and I have the funk. Mine started Sunday morning and got worse yesterday and today. Harry's had a runny nose for about a week but now it's nice and yellow and accompanied by a cough. TIS THE SEASON. We both feel ok, just trying to stay in and away from people and hopefully it will go away. Harry's going a little stir crazy I can tell, he keeps asking me about the gym and bible study but I figure the moms appreciate me not bringing my snotty nosed child around for a few days...

Do you buy the Wild Oats organic brand that Walmart carries? If not, you should (and this is not a sponsored post, btw) I absolutely love it. Its extremely affordable for organic and I've noticed with every trip to the store WO seems to have more product on the shelves.

A few weeks ago I was making a penne recipe for dinner so I purchased the Wild Oats penne and noticed a recipe on the back for Sausage Saute, so the following week I made the recipe on the back of the box, with a few additions and subtractions :)

Such an easy week night dinner to whip up for your family!


sausagesaute02Sausage & Vegetable Saute

ingredients
Wild Oats penne rigate
1 pound turkey sausage, cut into 1/2" slices (thicker or thinner according to your liking)
olive oil
1 small head broccoli, cut into florets
1 red bell pepper, roughly chopped
1 yellow bell pepper, roughly chopped
2 cloves garlic, thinly sliced
1/2 tablespoon Italian seasoning
1 teaspoon red pepper flakes
Parmesan cheese, shredded

directions
start boiling the water for the penne (my oven takes forever to boil a pot of water-so if you have a quick boil oven then wait to do this a little later). heat 2 tablespoons olive oil in a large saute pan over medium heat. add the veggies and saute for 2-3 minutes until they start to tender. add sausage and cook until starting to brown, about 7 minutes. you will probably need to add 1-2 more tablespoons of olive oil. lower heat and stir in Italian seasoning and red pepper flakes (eliminate if you don't like spice, add more if you if want to turn up the heat) and keep cooking on low heat. cook your penne while all the flavors are melding, I like for my pasta to be a little firm so I only cook 8-9 minutes, I think package might say 9-11 minutes. When penne is done, drain and with sausage saute and parmesan cheese!

We had ours with garlic knots [here] (they cook in the bag!) and a kale Caesar salad (kale, red onion, parmesan cheese, croutons, brianna's caesar dressing <-- my favorite),

the Kingdom

I started a new bible study a few weeks ago. Children of the Day by Beth Moore [here]. It is filling me and I look forward to going every week.

This past week during one of Beth's videos she said something that really resonated with me: whatever you are going through-use it for the Kingdom! She talked a bit about social media and how we have all created someone that people can admire or emulate but the "fake" cannot hold up to the fire. I knew in that moment that I needed to share more about the real me and the real things going on in my life.

We are ALL going through something. Some circumstances are worse than others. Like we are trying to find and buy a house and it is one of the most daunting things I have ever gone through. So much emotion and heartbreak is involved. And all the while our best friends are in Little Rock at Arkansas Children's hospital with their 3-week old daughter trying to figure out some tummy issues. Sweet Baby Girl has been poked and prodded so much the last week. It's so heartbreaking. So yea, their situation is way worse. But at the same time that doesn't mean my/our situation isn't worthy of having emotions. I need to feel all the emotions to know, to really really know, that God is in complete control and has this whole house thing already all figured out. It's a relief.....

September marks the 1-year anniversary of us trying to find a house. ONE. YEAR. And, of course going into the process we had a "must" list: size, acreage, location, school district, etc.......

We found a house the house 2 weeks ago. A 1980s colonial and at first viewing I didn't looooooooooooooove it but being the creative person I am I saw a lot of potential in it and thanks to Pinterest I saw many pictures of beautiful colonials and knew this house could be so amazing. No acreage, but a large back yard in a very sought-after neighborhood and in the school district we prefer. So we met a contractor there, got a rough estimate on the renovation. On a Thursday we made an offer, the owners countered and we made our final offer. We waited 3 long days to hear if they accepted our final offer and they hadn't. I found this out Monday morning and was crushed. I had spent all weekend dreaming, scheming, internet surfing, etc. all to have my new dream crushed.

I was so sad, so mad. Cried a little and thought ya know? I AM SOOOOOOOO DONE! (in a very teenage whiny tone). And, in that moment I was so done. I didn't want to go through that again.

But ya know what? I woke up Tuesday morning happy, excited, hopeful....

The steadfast love of the Lord never ceases;
 his mercies never come to an end; 
they are new every morning; great is your faithfulness.
                                                                        lamentations 3: 22-23

Because I trust in God's promises I know that he will give me/us the desires of our hearts if we simply pray about it! And in that early morning moment I knew this: HE'S GOT THIS! PRAISE THE LORD! I DON'T HAVE TO WORRY!

So, here I am. Back to square one. But I am here with a happy and hopeful heart. I know the house that we are meant to call home is out there waiting for us! It's such an exciting prospect and can't wait to know that house and make it ours!

I lift praises to Jesus for all the wonderful blessings in my life and I offer thanksgiving to Him for His provision in my life and the lives of those I love. Today and everyday. He is worthy of my praise!

What I Wore {Everyday Style}

I took Elle to a birthday party at Savoy Tea Co. this morning (cutest little place EVER) and had myself a pumpkin spice latte. That added with the crispness in the air has me ready for fall! All week long and last week too, we've been experiencing hot, upper 80º days, so it's hard to get in the fall mood when you're sweating wearing tank tops and sandals. There has been no fall transitioning going on yet. Maybe the weather will turn around this week and we can start wearing our layers and booties!

Nothing too exciting from me this week, ha! But we did have something going on every single day so I actually had to be presentable everyday! And, miraculously I remembered/had time to document my outfits. So yay me.

I am so obsessed with the square dance jewel necklace. SO OBSESSED. I love how you can pair with a simple tee and birkenstocks and not look too overdressed. Its so light weight too that you don't feel like Flavor Flav with his big clock necklace. You should invest in this piece for sure!

Easy Orange Chicken Skillet

Another busy weeks in the books. And another busy week in our future so we are going to relish in our weekend and rest, rest, rest.....hopefully

We had something every single evening last week. Some things planned and some things not planned so I didn't stick to much of a menu. But here's one good and fast meal I made for my family one night.

Easy Orange Chicken Skillet
recipe [here]

ingredients:
1 1/2 pounds boneless skinless chicken breasts, cut into 1" chunks
3 tablespoons vegetable oil
1/4 cup soy sauce (I used less-sodium)
1/4 cup cornstarch
3/4 cup frozen pulp-free orange juice concentrate, thawed
3 tablespoons barbecue sauce (I used Stubb's original)
sesame seeds
3 green onions, thinly sliced
5-minute white rice

directions:
• Mix together cornstarch, soy sauce and 2 tablespoons water. Add chicken to the mixture and stir to coat. Let marinate for at least 5 minutes. I actually did this step while Harry napped and let it marinade for a couple of hours and it was ready to go at dinner time...
• Make orange sauce by mixing together the OJ concentrate, barbecue sauce and 1 tablespoon of the olive oil. Set aside.
• Heat 2 tablespoons of vegetable oil over medium-high heat. Drain marinade off chicken and add to hot oil and stir-fry for about 7 minutes until chicken is heated through.
• Once chicken is cooked through add the orange mixture and heat through, an additional 5 minutes or so.
• While the chicken and the orange flavor is melding together, cook your rice.
• Top rice with chicken and garnish with sesame seeds and sliced green onions.
• ENJOY!

OrangeChicken02I served the Orange Chicken dish with store-bought frozen vegetable eggrolls (ELLE ATE 4!!), and premade Asian Salad from the produce section.

My family ATE THIS UP. Aaron even said that it was better than Chinese restaurant versions because it was less sweet :). There were not any leftovers. Love that!

What I Wore {Oversize Tunic + Skinny Jeans}

Happy Hump Day!

Where has this week gone? I can't believe its already Wednesday. The days just flyyyy by lately. Its no joke when people tell you that you won't believe how fast the days, months, and years go by when your children start school. I'm a believer now. I can't keep up. I'm looking forward to Thanksgiving break :)

I posted a few weeks ago how I'm loving the oversized tunic and skinny jeans trend right now.

These tunics from Maude come in several different colors and are a wonderful piece to have in your closet! I got it in green because I LOVE GREEN but also because I tend to migrate to black but have been trying to add more color to my wardrobe :)

Five Things Friday

5THINGSdexterWe finally finished Dexter. WHAT IN THE WORLD KIND OF ENDING WAS THAT? They had to have set it up for a movie. HAD TO. That can't be the end.

5THINGloaferWho is liking the loafer trend? I am LOVING it. I'm still trying to decide whether I want the classic penny loafer or the trendier pointy toe loafer. I adore both. I do have a pair from Target but they are so uncomfortable I can hardly wear them for an hour, so I think investing in a good pair that I can wear years to come is what I need to do next.

5THINGSfastfoodathomeI started a new Pinterest board called "fast food at home" for the quick and easy dinners that I want to be able to prepare during the week. The day goes by so fast and before I know it its time to pick up Elle from school, I have about 3 and a half hours from the time I pick her up to make dinner, clean up dinner, give baths, hang out, and do bedtime. It doesn't leave anytime for elaborate meals these days. So as I've been coming across fast meals to prepare at home, I've been pinning them. So I recently, on a whim, purchased the Pixie pant from Old Navy. I was in need of a pair of dark colored dress pants and tried these on and fell in love. They are so comfortable. Honestly, they kind of feel like wearing leggings. Truly. I got the dark gray pair and want to get a fun, printed pair too. I think they would be really nice paired with a chunky sweater and the coveted loafers aforementioned :) and I love how all these ladies have styled them.

5THINGSrainbowrowellI haven't done a post on what I've been reading lately. I'll do one next week. I've read several books since my last book report. Ha! A few ladies on Instagram suggested Rainbow Rowell to me and I read both of these books recently and enjoyed them. Fun, easy reads. And I love her writing style. I want to read Eleanor + Park too, but I took a break from Rowell to read some books with more suspense.

Well, another week come and gone. Today marks Elle finishing up her 4th week of school. One month under her belt. So crazy. She is loving it by the way. Relishing. Makes me so happy!

What I Wore {Old Clothes, New Booties}

It has been unseasonably warm for September. But I have been dying to wear my new booties! How fun are they? And so super comfortable as well. I couldn't wait to wear them any longer so I paired them with a tank and a midi and called it a cute fall transitional outfit :). It was only 90º the day I wore them..

Can we talk about the skirt for two seconds. I have had this for probably about 5 years now and it hangs in my closet year round. It was one of those "I'm not sure what I'm going to wear this with but its so cute" purchases that has really paid off. I linked to a fun option from Ruche, it's floral with the same pleated chiffon fabric and elastic waistband. A really great price too and something I promise you will wear year round like I do! Sometimes I wish it was a solid black, but the polka dots are super fun and polka dots never go out of style.

I'm definitely not complaining about the unseasonably warm temps we've been having. I'm hoping it means that our fall will last longer than normal and maybe just skip straight to spring. That would be ideal...

Black Bean Sliders {a quick and easy dinner}

I am all about some quick and easy meals these days. Between 3:30 and 7:00, I have to make dinner, clean up dinner, bathe kids and do bedtime routine. So that does not leave much time for elaborate dinners these days. Last week I made some quick and easy black bean sliders for dinner and my kids loooooooooved them! They were so easy to prepare and took a total of 30 minutes. Beginning to end. I loooooooooved that :)

BlackBeanBurger Black Bean Sliders
makes 6-8 sliders

ingredients:
1 can black beans, drained
1/2 cup bread crumbs
1 jar pimentos, drained (feel free to add chopped bell pepper, mushrooms or any other veggie you love...i just happened to have a jar of pimentos handy)
1 egg
1/2 white onion, grated
slider buns
hamburger toppings (we like tomato, avocado, romaine and sriracha mayo)

directions:
Heat 1/2 cup oil over medium-high heat. While oil is heating, mix above ingredients and shape into slider size patties. Put into heated oil and cook 4 minutes each side. After you're done with the patties pour out the oil and toast the buns in the same skillet.

(the patties can also be made ahead of time, like when your toddler is napping :).... just store them in the fridge until you're ready to fry 'em up)

Load up your buns and ENJOY!

Labor Day

Happy Labor Day! Hope you're enjoying a relaxing day off from work. Elle stayed the night with my parents so I'm one kid down, which sort of feels like being off work. When Elle's away, Harry is the easiest child on the planet. No competing, fighting, whining...ha! So he's playing in his room and I'm cleaning up the huge mess I made over the weekend.

I decided to get out all the outgrown kids clothes and do a sale on Instagram. I started with Harry's stuff last night and still need to do all Elle's clothes this week.

I really hate transitioning closets so that's a MUST on my list for what we want in our next home. BIG CLOSETS and MORE STORAGE. There is only one walk in closet in our house now and its in our bedroom and it is the most narrow closet you've ever seen and pretty small for a walk in closet so there is no storing out of season clothes in our closet and the kids don't have walk-ins and their closets are so tiny (the kind with the accordion doors) so no storing in their closets either so when at the change of the seasons we (and by we I mean Aaron) have to haul down all the rubbermaids from the attic and haul them back up. It's really fun for him. He looks forward to it every year.

I also decided to go ahead and do the sale because I need to make room for all the clothes I've been buying. Ha! My favorite one-stop shop for the kids is Baby Gap/Gap Kids. I know I can go there and get everything for my kids. I usually love all their boy and girl stuff and can find plenty for my kids there. And they're always having 40% off sales! Which is so nice. They're having one today actually! If I could shop ANYWHERE for my kids it would be Zara, but it's way out of my price range and they never have sales (online anyway) but I'm obsessed with everything from there for Elle and Harry.

I feel like Elle needs SO. MANY. CLOTHES. since we go to public school and don't have uniforms. And actually, she doesn't, because we do own a washer and dryer. So, I have tried to be very conscious of what I am buying her: comfy dresses that she can wear with leggings and sneakers (PE twice a week) and some comfy joggers and cute hoodies. She can still wear most of her skinny jeans from last year, so that's huge. Although she will probably prefer to never wear them. Ha! So far we haven't had any fights over daily outfits but only because I think she is too tired in the morning to put up a fight but she has mentioned to me a couple days at pick up that she didn't like what she had on when she got in the car.... "hard to play in", "wood chips got in her shoe", "it was too hot"..... but I'll take that over fights any morning.

I still have to get tennis shoes for the kids, both grew out of their pair at the same time, and outerwear for the winter. I'll wait for another 40% sale next month. I probably need to take a break for now :)

Are there any kids labels out there that I'm missing out on? Of course, I also buy the kids lots at Target, Walmart and Old Navy. And I like to hit up Crazy 8 on occasion. But what else is out there?

Gulf Shores 2015 {picture overload}

It stormed the night we got there but only lasted a little while and the rest of the week was amazing. My kids loved the water and the sand and played so good together all week. Our condo was right on the beach, by the boardwalk and pool so we had a fun view and not a far walk.

It really was the best week ever. We had such a great time just the four of us. Who knew? Ha! Just joking, I totally knew we would have a great time. We were on our schedule and it was so nice to do whatever we wanted, when we wanted. Don't get me wrong....I looooove going to the beach with my family but it was really special it just being us for once. I see many more just-the-four-of-us vacations in our future.

OH....we went to Gulf Shores. It was so quiet. The waits at restaurants weren't too long and there was hardly any traffic. We loved the area we stayed and it was nice to cut out 3-4 hours of travel. We'll definitely go back to the Gulf Shores area in the future.

What I Wore {Date Night Stripes}

This school thing is kicking my butt. Elle's adjusting so well, but I'm still struggling. I've gotten over the initial emptiness I was feeling the first few days. I miss her every single day, but I'm getting used to her now being gone all day. The first (let's say week) was bad. Awful. Strange. Sad. But every day at pick up when she would jump in the car and start sharing events from her day, it started getting easier. She loves school and it makes it a lot easier on me that she loves it so much. What I still can't get used to is having to be somewhere every morning and every afternoon. I feel like I'm always in "go" mode. Which is fine, and good, and all that but I'm not used to it yet. We are only on week 3, so I feel like once we have the first month behind us things will start to feel old habit. Hoping any way :)

The week we got back from the beach Elle started kinder, my grandfather was placed in hospice and passed away four days later, and Aaron started his doctors appointments...

About the doctors appointments:

He was in a wreck two days before we went to the beach. He blacked out while driving. Total freak incident. He has never had a black out incident and hasn't had one since the wreck. SO THANKFUL that he was not injured during the wreck and did not injure anyone else. SO THANKFUL. But since, he's seen a general md, a cardiologist and plan to also see a neurologist to rule out everything. It's most likely a total freak-will-only-happen-one-time blackout but we are checking all the boxes before moving on.

So, yea its been a little busy for our little family (hence the no blogging).... Things should start slowing down a little for us now. I feel we are on the downhill slide :)

Needless to say our double date night with friends over the weekend was much needed and much enjoyed!

We went to a new place in Bentonville, Oven and Tap. It had a super cool atmosphere. Aaron thought it was too small portions but I actually like that. You can have a drink (or 2), an appetizer and your meal and not feel like a stuffed duck when you leave. I had the garden mule (vodka, grapefruit, mint, rosemary and ginger beer), the pimento cheese app and the mushroom ragu. It was all very good! We'll be back for sure.

This top is my new favorite. I want to get it in every color available, but that would probably be stripe overkill. Even for me :).... It is so soft and slinky (it's that slub material), will go with any and everything and will be the perfect transitional piece for fall and layering piece for winter. Untucked its the perfect butt-covering length too.
