Black Bean Sliders {a quick and easy dinner}

I am all about some quick and easy meals these days. Between 3:30 and 7:00, I have to make dinner, clean up dinner, bathe kids and do bedtime routine. So that does not leave much time for elaborate dinners these days. Last week I made some quick and easy black bean sliders for dinner and my kids loooooooooved them! They were so easy to prepare and took a total of 30 minutes. Beginning to end. I loooooooooved that :)

BlackBeanBurger Black Bean Sliders
makes 6-8 sliders

1 can black beans, drained
1/2 cup bread crumbs
1 jar pimentos, drained (feel free to add chopped bell pepper, mushrooms or any other veggie you love...i just happened to have a jar of pimentos handy)
1 egg
1/2 white onion, grated
slider buns
hamburger toppings (we like tomato, avocado, romaine and sriracha mayo)

Heat 1/2 cup oil over medium-high heat. While oil is heating, mix above ingredients and shape into slider size patties. Put into heated oil and cook 4 minutes each side. After you're done with the patties pour out the oil and toast the buns in the same skillet.

(the patties can also be made ahead of time, like when your toddler is napping :).... just store them in the fridge until you're ready to fry 'em up)

Load up your buns and ENJOY!
