Banana Oatmeal Muffins

We love anything banana around here, and this recipe is so easy and has become my go-to for banana muffins. I got it from a cookbook my aunt gifted me when Aaron and I got married 8 summers ago and I've only recently made the muffins and since have made them a couple of times a week.

My kids LOVE these and eat them up within DAYS. They are so perfect for breakfast or for a snack.

Banana Oatmeal Muffins
makes 12 muffins

1 cup oatmeal
1/2 sour milk (1 2/3 tsps vinegar added to lukewarm milk)
1 egg
1/2 cup brown sugar
2 mashed ripe bananas
1 cup flour
1/2 tsp. baking soda
1 tsp. baking poweder
1/2 tsp. salt
1/3 cup vegetable oil
1 cup chopped nuts of choice (I like walnuts and pecans)

preheat oven to 400ยบ. mix ingredients in order they are given. if using a hand or stand mixer select the lowest setting. fill greased muffin tins (you can use papers if you like) 2/3 full and bake for 15-20 minutes. my oven cooks fast so my muffins only take 15 minutes to bake.

  1. This is a very simple recipe for an organic banana oatmeal muffin. I always add fresh chopped cranberries and ground ginger to spice up the muffins. Helene Goldnadel
